How to Spice Up Refried Beans

Posted on 24 February 2012 by Mark

We love refried beans that they serve in mexican restaurants. Trouble is we can’t seem to buy them like that
in the local grocery store. All the brands are paste like and don’t seem to be creamy enough. Here’s a way to doctor up the store bought beans. Buy a can of refried and heat it up in one of your cast iron pots. Add a small amount of olive oil. When the beans are hot, add two large spoonfulls of sour cream and stir in. For added flavor we also add some Stokes green chili with pork. These go great with breakfast in the morning or with your favorite mexican dish. They are also great just for dipping with chips

Posted on 16 February 2012 by Mark

If you have a lot of leftovers and you don’t know what to do with them.
make a pizza. We always keep some ready made pizza dough in the cabinet.
You can buy some that doesn’t take time to rise. You just mix it up, roll it out
and make a pizza. You can put virtually anything on a pizza and it will taste
good. Any kind of meat or vegetables will work. We have even made a breakfast
pizza for dinner. We just add scrambled eggs, bacon or sausage and potatoes
with some cheese to our cast iron pizza pan and pop it in the oven. If you have
leftovers, you can make a pizza and it’s fun.

Have Breakfast For Dinner

Posted on 09 February 2012 by Mark

One of my favorite meals is breakfast and one of my favorite times
to eat is for dinner. A simple meal is to microwave some potatoes,
until they are soft and then cut them up into 1/2″ cubes. Then cook some
sausage in one of your cast iron frying pans, pour off the grease, add
the potatoes and 8 – 12 eggs, stir up and put it in the oven at 375 degrees
until it is done. Add a little sour cram and you have a great meal. If you
don’t eat it all, save it because it is really good at room temperature as well.

After A Hard Day, Cooking Relaxes Me

Posted on 25 January 2012 by Mark

After a hard day at work, nothing relaxes me more than cooking a simple
meal and having a glass of wine. You don’t have to make it complicated
to make it good. Simple can be delicious. Open your cupboard where you
keep your pre seasoned cast iron cookware and take out your skillet. Cut up
some veges, coat them with olive oil, garlic or whatever you like and cook
them over medium heat. Tear up some good bread, add a little butter and
enjoy. Not only good, but healthy.

One Pot Cooking

Posted on 16 January 2012 by Mark

If you don’t like doing  a lot of cleaning up after a good meal,
try one pot cooking. A simple meal with lot of flavor can be
done in one pot. You can brown some chicken in your
cast iron pot with a little oil. Once the chicken is brown, add
some mushroom soup, carrots and celery and put it in the oven.
Cook until chicken is done. Simply take the pot to the table and serve.
Just make sure to put a trivet under the pot so you don’t hurt your
table. Now you only have 1 pot to clean instead of a pot, skillet and
serving dish.

Make Your Own Pizza, It’s Fun!

Posted on 15 January 2012 by Mark

Give the pizza delivery guy a break and make you own pizza at home. Not only will it be hot,
but you can make it your way. Everything you need is at the grocery store. I like to make my
own dough and roll it out, but if you don’t want to do that, you can buy them pre-made. Add
any ingredients you want, sausage, hamburger and vegetables. Once you have the
veges cut up, lay the rolled out dough on you cast iron pizza pan, add the sauce and your
toppings. You can put your cheese under the topping and then sprinkle some more cheese on top.
Cook in the oven at 425 degrees until the edges are a golden brown. Take out of the oven, let stand
a few minutes before cutting up an serving.
